EDITORIAL REVIEWS

Book Description
Cathe Olson (Simply Natural Baby Food) is back with The Vegetarian Mother’s Cookbook, a collection of more than 300 delicious whole foods recipes designed to nourish mothers and their families throughout pregnancy and lactation. The easy-to-prepare dishes are packed with protein, fiber, vitamins, minerals, and essential fatty acids to help both mother and baby thrive. Entrées include many "quick fix" meals and freezable dishes – perfect for the busy parent. Many of the recipes in the book are vegan, and almost all of the recipes provide vegan options. For those with allergies, wheat-free, soy-free, dairy-free, and egg-free dishes are also included. There are even teas and tonics to help ease common pregnancy discomforts.

In addition to recipes, The Vegetarian Mother’s Cookbook provides up-to-date nutritional information with recommended dietary intakes, complete guide to ingredients, suggested shopping list, and tips for saving time and minimizing work in the kitchen. This book is a comprehensive eating guide for vegetarian mothers, and for non-vegetarians who want to include more whole foods in their diets.

Recommended to anyone interested in a whole foods diet!
Absolutely love this book! All of the recipes are delicious! Even my non-veggie husband enjoys the meals that I make from this cookbook. It's not just for pregnant moms, but for the whole family.

Simple and Delicious
I'm glad I chose this book. The recipes are simple and straightforward, and many of them can be prepared in stages. They're also very malleable -- it's helpful that the author always suggests different kinds of nut butters or sweeteners, for variety and availability. I particularly appreciated the tea and drink section at the end of the book.

So far I've used the recipes for Sweet Potato Biscuits, Granola, the Orange Creamsicle Smoothie, and the Tomato Omelet, and I've got a bunch tagged for future use.

HEALTHY, DELICIOUS, EASY RECIPES
This cookbook is absolutely amazing! I got it from the library a few days ago and ordered one for myself the very next day! I have made recipes from it EVERY DAY since I got it and they have all been wonderful! The very first recipe I made was Cathe's Tofu Vegetable Stir Fry and I had a question about browning my tofu. In the book she shared her email address and said that she welcomed comments or questions. I figured it was a long shot but I emailed her (not expecting to get a reply). Well, much to my surprise, not only did she reply, but she gave me step by step instructions to answer my question and was so friendly and helpful! She didn't seem at all put out that I would ask such a simple question. Since then I have made her Potatoes and Veggies served with Scrambled Eggs, her High Protein Pasta with her Easy Marinara sauce and her Pumpkin Pesto Ravioli (my personal FAVORITE!!!). My family (3 1/2 yr old twins, a 1 1/2 yr old and a very picky hubby) all LOVED every single thing I have made from this book!!

Another perk is that she shares nutritional information on all the recipes. Also, the recipes are EASY to make and don't have difficult to find ingredients. She also has freezing instructions for many of the recipes which is extremely helpful!

I'm having a BLAST with my new cookbook. This is by far the best recipe and nutrition book I've ever seen. I can't put it down - it is worse than being in the middle of a good novel! :-) I have a TON of cookbooks in my kitchen and this one is by far the very best one I own. Don't be fooled - this book is not only for pregnant/nursing mothers. It is for ANYONE who wants HEALTHY, DELICIOUS, EASY RECIPES.

Amazingly yummy! My family LOVES every meal from this cookbook!
My husband and I and now our 14 month old son stick to a diet that is about 90-95% vegetarian. We can't always live up to being completely meat-free, but only because sometimes the vegetarian options are less than satisfying. With that said, I am always looking for tasty vegetarian recipes that don't feel like punishment. Cathe Olsen is amazing!!!

There are combinations that I would never have thought of and every ounce of me says "Ewww, that won't work together." But a leap of faith and a little cooking later and I am stunned that everything turns out so tasty. It is expanding my repertoire of vegetarian cooking and inspiring my own new recipes using some of the different ingredients I had never used before this book. Very inspiring.

I have not had a single disappointing recipe from this book. Everything, absolutely everything is wonderful. My family is eating it all up. My husband is even taking the leftovers to work for lunch on his own initiative (and he really hates leftovers). I highly recommend the tortilla soup and the squash and bean soup and the sweet potato enchiladas. The squash and spinach lasagna was great (except I think I might par-boil the lasagna noodles next time b/c I think the starch in the noodles gives off a bitter taste).

My main purpose for eating primarily vegetarian is the health benefit. This book gives you a break down of nutrients, vitamins and minerals with each recipe. I initially picked up the book when I got pregnant, but the title is a bit misleading. This isn't just for pregnant mamas, it is fantastic eating for everyone.

Love it. Buy it. You won't regret it.
